Our Beef & Farming Practices

  • Our beef is raised right here on our family’s farms in Dauphin County, Pennsylvania. Our cattle are cared for with attention to their health, diet, and overall well-being, ensuring that every cut of beef is high-quality, flavorful, and responsibly raised. When you buy directly from our farm, not only are you supporting our local agriculture, but you’re getting beef you know you can trust.

  • Our cattle are pasture-raised on grasses and hay, and then grain-finished with a diet of corn or barley silage—freshly chopped corn or barley that is allowed to ferment naturally. This finishing process enhances the beef’s marbling and flavor while keeping it tender and juicy. All of the crops and hay fed to our cattle are grown right here on our farm, so we maintain complete control over the quality and nutrition of their diet. The result is beef that is rich in flavor, naturally raised, and truly farm-to-table.

  • Our beef is dry-aged for 21 days to bring out maximum flavor and tenderness. During dry aging, the beef is stored in a controlled environment where natural enzymes help break down the meat. This results in a richer taste and more tender texture.

After aging, the beef is cut, vacuum sealed, and frozen to keep it fresh and flavorful until you are ready to enjoy it. Dry-aged beef that offers a more robust flavor than most grocery store options.

Quality & Packaging

  • Our beef is sold frozen. Once the dry-aging process is complete, the beef is cut, vacuum sealed for quality and freshness, and then frozen. Freezing allows us to offer consistent quality without the time pressure and weight loss that occurs with fresh meat. For a small family farm, this helps us manage costs while still providing high-quality, locally raised beef to our customers.

  • After cutting, each portion of beef is vacuum sealed and frozen to lock in flavor, tenderness, and freshness. Vacuum-sealed packaging also helps prevent freezer burn and makes it easy to organize your freezer. Each package is labeled with the cut and weight for easy reference.
